Super Greens. The overlooked artichoke has so many health benefits that can be crucial for a vegan diet. Adding artichoke to your diet regularly is proven to lower blood pressure & improve your hearts health. Its loaded with vitamin C, K and many more. It is also loaded with minerals & high in fibre. Our recipe for you today is a simple baked artichoke. You'll need; 3 fresh artichokes 5 garlic cloves 1 Lemon Olive oil 3 sprigs rosemary Salt & Pepper.

Trim and prepare the artichokes, slice in half & hollow out the middles with a spoon.

Brush the artichokes with olive oil all over & place them cut side up in a baking dish.

Fill the artichoke cavities with crushed garlic & chopped rosemary (make sure they're full for maximum flavour) adding salt & pepper

Roast!! 10 minutes 170 uncovered, then covered loosely with foil & cooked until tender.
