Ingredients2 tbsp. butter2 cloves garlic, minced1 red chilli, thinly sliced8 ounces purple broccoli1/2 lemon1/3 cup vegan parmesan or nutritional yeast1/4 cup toasted bread crumbsSea salt & black pepper to taste.
in a skillet or heavy pan, melt the butter over a medium heat until golden brown
add the garlic & chilli until fragrant
add the broccoli, turning frequently until tender (4-5 mins)
Sprinkle the broccoli with the vegan parmesan & squeeze the fresh lemon juice over the top.
season with salt and pepper
after an extra minute, add the breadcrumbs and toss to coat
Serve & enjoy! I like to have this for lunch on some toasted sourdough bread either layered with hummus or just a drizzle of olive oil.
